Spiced Cookie Butter Blossoms
These chewy cookies swap out the peanut butter from their classic counterparts for a brown sugar-spiced cookie butter.
It is the season of the cookie platter, and I would be remiss if I did not share all of my favorite cookies along with a few new ones. Today's recipe is a warm-up, if you will, and an excellent one to shoulder the transition between Thanksgiving and the winter holidays.
One of the most popular Christmas cookie recipes on preppykitchen.com is the Peanut Butter Blossoms. It’s a true classic and a staple on any platter. But sometimes I want more than just the simple, classic version— I want a twist, so here we go!
Cookie Butter Blossoms swap out the peanut butter for a brown sugar-spiced cookie butter. I have to say, this addition gives you a beautiful cookie with even more flavor. It’s essentially a cookie flavored with cookies!
The classic cookie butter we use is a speculoos-flavored one. The most popular brand is Biscoff—those iconic little airplane cookies they serve because they have so much flavor you can taste them even at high altitude. (Side note: Did you know that higher altitudes affect your taste perception? A tangent for another day, but it’s fascinating!)
Speculoos cookies originated in Belgium and get their signature flavor from a special blend of spices, including cinnamon, nutmeg, clove, ginger, cardamom, and black pepper. You could use any cookie butter you want for this recipe, though. More and more versions have been popping up in the market, including ones with chocolate swirls.
