I’m very excited about today’s newsletter, because I’m sharing a true Danish pastry dough recipe with you! I often use frozen puff pastry or homemade rough puff to make danishes—while they are delicious, it’s a shortcut. A proper Danish is made with a laminated yeasted dough, so you get a balance of flakiness, chewiness, and extra puff from the yeast in addition to a deeper flavor.

It’s actually very similar to the dough and process for making croissants, but a little lower-lift because the laminated layers don’t have to be so perfect. If you’ve ever been curious about making croissants, but haven’t wanted to dive right in, try this Danish dough first, and get your feet wet!
