Cinnamon Crunch Biscuits
An easy, super fluffy biscuit topped with a crunchy cinnamon-sugar streusel.
Few things are better than a fluffy, buttery biscuit. Some people enjoy theirs plain. I, however, like a touch of sweetness. These cinnamon crunch biscuits give you just that. They’re very easy, almost drop biscuit-like, where you don’t have to do the folding and stacking that a traditional biscuit would need. Just stir the dough, pat it out, and cut.
Each one then gets topped with a crunchy, sweet, and delicious cinnamon streusel topping. The effect is pretty impressive, but as I said earlier, it comes together with almost no effort. These are perfect for brunch or when you just want a bit of a sweet treat in the morning with your coffee.
What are the two secrets to making the fluffiest biscuits? One is to use buttermilk to add a bit of acid that will react with the baking soda, causing the biscuits to rise for a fluffy and tender texture.
Two, we’re going to work the cold cubed butter in just until we have pieces the size of peas and almonds. These larger pieces of butter will both dissolve and steam up in the oven, and give us that fluffy texture we love. You might think this is gilding the lily, but I love these with a lashing of either honey or maple butter—so decadent and delicious.
