Carrot Coffee Cake

Sour cream coffee cake gets an upgrade from one of my favorite cake flavors.

We are officially into the first week of April and already getting a taste of warmer weather (despite it snowing!!! at the farm yesterday…). This is when I start to pull out some of my favorite Spring baking recipes, and a carrot cake is always on the list. I wanted to share a recipe with you that celebrates this delicious, classic dessert. But honestly, I already have a fantastic carrot cake on the blog, and I wanted to do something different, special, for you. So, I brought carrot cake to one of my other favorite cake types: coffee cake.

This is such a delicious combo. Sour cream already works well in coffee cake, adding moisture and contributing to a tender texture. Grated carrots only amplify that. They had moisture, sweetness, and a bit of texture from the shreds strewn about the cake. We also have all the classic spices—cinnamon, ginger, and nutmeg—to flavor the cake, plus an optional but encouraged vanilla glaze to finish it off.

Trust me when I say, you must bake this coffee cake this weekend! A Saturday morning cup of coffee and a slice of this are just waiting for you… Happy baking.
